Angelo Morinelli was born in Naples Italy. His passion for food was fueled by working in the family restaurant in Rome. Angelo Morinelli is a well-versed chef. He amassed a wealth of experience working and traveling in Italy, then taking over his family's Long Island restaurant, La Cisterna In Mineola, New York. Chef Angelo Morinelli established Cucina D'Angelo in 2002, at Boca Center. The restaurant quickly became recognized as one of South Florida's finest destinations for authentic Italian cuisine. For over 40 years, Chef Angelo has garnered the respect of the industry and his loyal clientele. Chef Angelo displays well-disciplined culinary talent and extensive knowledge of fine Italian wines, as well as skill at pairing wine with food. Chef Angelo opened "Tanzy" of Mizner Park and now brings 40 years of international culinary experience to Deerfield Beach.

The Story began forty years ago when PJ gave her boyfriend (now husband), Robert Rex, a winemaking kit as a thank you gift for keeping her Alfa Romeo Spider running like a top. She knew he was a good cook and a chemist and loved great wine so she figured he’d be a natural at making wine. He was. She’s still driving the same Alpha, Robert’s still keeping it purring and together they are making some great wine.
Robert and PJ built and operate the Deerfield Ranch Winery, in the heart of Sonoma Valley in Kenwood. Thirty years ago they got married at Deerfield, turned an old horse barn into their first winery, and have never looked back. Deerfield is now a 35,000 case winery on the Sonoma Highway in Kenwood, where they have a tasting room in the middle of a 23,000 square foot wine aging cave. Deerfield wines are renown for their brilliance, balance, complexity and cleanliness. The red blends, Robert’s specialty, are aged longer in the barrel than any other California wine.
Deerfield has pioneered the clean wine concept. One of their employees has taken a leave to undertake studies at the University of California to learn more about clean wine production. Clean wine is free of compounds that may adversely affect the wine drinker. Even moderate levels of sulfite in wine can cause allergic reactions. Biogenic amines, particularly Histamine, can cause headaches. Deerfield wines are organically produced and are Vegan. Bacteria and toxins on the grapes and in the juice produce Histamines. By careful vineyard management, including sustainable, organic and biodynamic farming methods, hand picking and triple sorting the grapes before the fermentation, and good fermentation management, the histamine production is reduced to negligible level. This allows Robert and his team to make wine with no sulfite (SO2) addition until barrel aging begins, and then the SO2 is used only as an oxygen scavenger, keeping the wine from prematurely oxidizing during the extended barrel aging. After bottling, the wine is not released until the free SO2 (used up by the free oxygen) is less than one third of the lowest published human reactive level.
By remaining on the cutting edge of winemaking, Deerfield can afford to take the extra care, and commitment necessary to produce wines that are not only good for you but great tasting. Robert says, “You shouldn’t have to think about whether you like a wine or not, It should just be delicious” With 40 years of experience and a source of grapes that is world-class (29 Sonoma County vineyards are under contract to Deerfield) whatever wine comes out of Deerfield Ranch Winery is special.
@Wine was born of the great recession of 2008. Necessity is the mother of invention and the necessity came from the first decline in the wine industry since Prohibition. Consumers traded down on necessities as well as luxuries. The wine they drank was no exception. Instead of buying $75 Cabernet they would buy the $35 one. Instead of $40 Merlot, it was the $25 one. While Deerfield wines weathered the period better than many, the Rexes looked for ways to provide a good wine at a recession friendly price without compromising the Deerfield commitment to excellence.
